When John Martin first started as the Food Service Director with Edwardsville, IL School District 7, the schools' breakfast program participation was around 10 %. John and his staff got to work and revised the programs' offerings, providing greater variety, and including milk with every selection!
Now, just over one year later, breakfast participation has increased 5% in elementary, 4% in middle and 1% in high schools.
John also increased a-la-carte milk sales in high schools by selling items that paired perfectly with milk: freshly baked chocolate chip cookies, homemade rice crispy treats and brownies. Of course, grab-and-go bottled milk was added and these changes resulted in a 10 percent increase in sales!
The schools also held a district food show, where Prairie Farms, the district's milk vendor, introduced two new flavors: cookies and cream, and orange dreamcicle. Cookies and cream proved to be a huge hit and milk consumption increased by 5% over the previous year after the new flavors were added.
John and his staff continue to promote milk and have already come up with new ideas for the coming school year. A new program they will be trying out is breakfast in the classroom. They hope to increase participation in the breakfast program and increase milk consumption along with it!
