When Carlette Drabek began her career as Food Service Director with the Schulenburg ISD in Schulenburg, Texas in 2007, she realized the need to increase student participation in the schools' breakfast programs. She implemented Breakfast in the Classroom for grades PK-8th to ensure that even students who arrived at school late were able to receive a nutritious meal to start their day. With this program, Drabek realized success in increasing breakfast participation as well as student milk consumption.
Since the start of Breakfast in the Classroom, the program has moved into the cafeteria where all students, PK-6th grade, receive a free breakfast consisting of an entrée, milk and/or juice. Students who arrive late still receive a breakfast and junior high students continue to enjoy breakfast in the classroom.
The program has seen a participation increase of 140% from the 2006/07 to 2007/08 school years and Drabek hopes the implementation of grab-n-go options for their secondary level students in the 2009/10 school year will help continue this increase. Along with the increase in overall program participation, the school has also seen a 48.2% increase in student milk consumption.
